Instructions:
Step 1
Clean the cow's intestines casing. The first step in making Mutura is to clean the cow's intestines casing. To do this:
• Cut the casing into 1-meter-long pieces and rinse them thoroughly with clean water.
• Soften them in warm water for about 30 minutes.
• Scrap any excess fat or residue from the inside of the casing with a knife.
Step 2
Prepare the filling. Combine the minced meat, chopped onion, garlic, ginger, cumin powder, coriander powder, paprika, salt, and black pepper in a mixing bowl. Mix all the ingredients thoroughly until they are well combined. Add some water to the mixture to make it more moist and manageable.

Stuff the casing. Take the cow's intestines casing and tie a knot on one end. Then, use a funnel or a sausage stuffer to fill the case with the meat mixture. Pack the filling tightly into the casing, leaving little space to tie another knot.

Cook the Mutura Once you have stuffed the casing, you can now cook the Mutura. You can choose to grill it or boil it. To examine it, preheat your grill to medium-high heat and grill the Mutura for about 20-25 minutes, turning it frequently to ensure it is even. To boil it, fill a large pot/sufuria with water and bring it to a boil. Add the Mutura to the pot and let it simmer for 30-40 minutes until fully cooked.

Serve and enjoy. Once the Mutura is ready, please remove it from the grill or pot and let it cool for a few minutes. Then, cut it into bite-sized pieces and serve it with your favourite condiments, such as kachumbari (a Kenyan salad made from chopped tomatoes, onions, and chilli peppers) or a spicy tomato-based sauce.
